Whats the best way to make potatoes? Theres so many ways to make the versatile spuds. In this post, I’ll show you the best way to make crispy, crunchy fried potatoes. This probably wouldn’t be for breakfast as it falls into the french fry-potato chip flavors. I suggest the typical Idaho white potato for this recipe. I tried using a fingerling potato and no matter how long I cooked it, it wouldn’t get crunchy.
Below I put a quick recipe for a spicy 1000 island drizzle but you could make any assortment of different sauces that would work with this. Lets get into it.
The first thing you’ll need to do is to peel and wash your potatoes. Then cut your potatoes long ways about half an inch thick. You should end up with 4 or 5 pieces. This next step is the important part. Put you piece down on a cutting board with chop sticks on either side. Cut slits a quarter inch thick down the potato not cutting all the way through as the chop sticks are in the way. Then flip the piece over and do the same in between the first cuts, not going all the way through.
This part is kinda tricky. Take a wooden skewer and poke it through long ways not going through either side. You’ll end up with what looks like a flat potato pop. At that point you should be able separate the potato like a accordion down the stick.
Soak and drain your accordion potato pops in cold water twice to remove any extra starch for extra crunch. Make sure they are completely dry on a paper towel and even pat them dry to get in the cracks. You don’t want any water on the pops when you drop them in oil.
Get your pan on medium high heat with an inch or so of vegetable oil in a deep pan. You may need to break the skewer to fit in the pan. Cook until lightly brown and pull out and let them drain and dry on paper towels. Once dry, drop them again and cook until golden brown. Pull out, place on paper towels and salt immediately.
At this point you could go crazy with different seasonings and sauces. Even elotes style would be so good. This has food truck written all over it. For this one I did a spicy 1000 island, see below for the recipe.
